ANISEED MYRTLE SPICE   made from the crushed leaves of the beautiful Aniseed Myrtle tree has a subtle sweet liquorice flavour. Aniseed Myrtle teams well with fish or pork dishes. Use Aniseed Myrtle anywhere that you require a subtle aniseed flavour such as steamed rice , seafood, stocks, breads, biscuits, pastries, desserts, ice-cream, or beverages.

CINNAMON MYRTLE SPICE contains the substance cinnamonum which imparts a subtle, sweet, warm, cinnamon-like flavour . Add to curries , stews and rice dishes (wonderful in steamed rice for a subtle unique flavour). MOUNTAIN PEPPER Fast becoming known for its superior aroma, flavour and heat to that of the peppercorn, Mountain Pepper is an exciting new savoury hot spice.   Mountain pepper (Tasmannia Lanceolata) is a shrubby plant native to the cool, moist mountains of Tasmania , Victoria and southern New South Wales . Most supplies still come from wild harvest, though cultivation is well under way so supply is reliable. Mountain Pepper is hot and peppery with a hint of chilli afterburn. The berries have a distinctive spicy, pungent taste and are very aromatic, giving them a unique savoury flavour.

Whole dried berries can be used in a pepper mill. Mountain Pepper can be used in any recipe that calls for pepper, but mountain pepper has much more punch!

RAINFOREST MINT HERB Australian Rainforest Mint is amongst the worlds strongest mints and a small amount is all that is needed for a truly unique flavour. Mint is a stimulant and acts primarily on the digestive system. Mint can be effective treatment for flatulence and nausea. Rainforest mint has a very dominating woody peppermint flavour and an exquisite but very powerful aroma.   This mint makes a mint sauce to die for. With the simple additions of sugar and vinegar, this mint is delicious. Use as a substitute for exotic mints, but remember this is very powerful, so go carefully.

RIVER MINT HERB This delightful mint hails from the Murray Darling River System and has more menthol notes than the rainforest mint. Refreshing and uplifting in teas and drinks, lovely sprinkled through a salad (especially accompanying seafood) and of course teams well with lamb cuts.

STRAWBERRY GUM is a unique flavour sourced from a northern NSW native eucalypt, which contains the same chemical flavours as the strawberry. It improves the flavour of fruit dishes and imparts a lovely strawberry flavour to custards, ice cream and yoghurts. Also used in baking.

BUSH TOMATO

Akudjura (the aboriginal name) has a definite pungent tomato flavour and aroma. Much stronger and less acid than sun dried tomato with other sweeter characteristics reminiscent of caramel and tamarillo. The flavour matures on standing or prolonged cooking. Akudjura can be eaten by themselves as a pungent flavour quencher similar to an olive - try them with your next cheese platter. Roughly chop or grind in a mortar and pestle to make your own fresh Bush Tomato Spice. Bush Tomatoes are great in salsa’s, relishes and chutney’s – their strong flavour teaming with red meats particularly well.
